Champ potatoes

Mash potato is so comforting and this recipe for champ is no exception. The chopped spring onion adds a lovely light onion flavour and great texture. It’s perfect with my lamb shanks recipe and so good with sausages too.


  • 1 and half kilo floury potatoes
  • 1 Bunch of spring onions finely sliced
  • Single cream
  • Butter


Step 1

Wash and peel the potatoes. Cut into quarters and place in a saucepan. Add salt and bring to the boil, continue to cook until a skewer pushes in with ease.

Step 2

Drain the potatoes and mash making sure there are no lumps. Add a generous knob of butter, the spring onions and a splosh of cream. Use a fork to whip the mash and serve making a small well in the middle and adding a knob of butter to melt into a small puddle.
