Chicken on a skewer with five spices.
These tasty chicken morsels are a delight, perfect party food!
Allow some time for marinating. At least 30 minutes. I usually leave mine in the fridge for a couple of hours.
You can prepare this a day ahead and keep covered in the fridge.
Great cooked under the grill, a ribbed griddle plate or on the BBQ.
Very quick to cook, so perfect if you have a summer BBQ gathering and you want to offer something different.
- 4 Chicken breast fillets (or as many as you want just double up the marinade)
- 5 Tablespoons vegetable oil
- Bunch of spring onions finely sliced
- 4 Fat coves of garlic crushed
- 1/3rd Pint of dry fino sherry
- 4 Tablespoons light soy sauce
- 1 Teaspoon Chinese five spice powder
- Small Wooden skewers. Soak these in warm water.
Make the marinade. Heat the oil an a wok or similar pan, add the sliced spring onions and garlic and cook gently for 2-3 minutes until soft but not coloured. Don't burn the garlic or it will be bitter!
Add in the sherry, soy sauce and five spice powder and bring to a simmer stirring for 4-5 minutes. Remove from the heat and allow to cool to just warm.
Slice the chicken across the grain into just under 1/4 inch thick slices, place into a bowl or similar container, pour over the marinade making sure all the chicken is completely covered. Place into the fridge and leave to marinate for at least 30 minutes, longer is better.
Thread 3 pieces of the chicken longways on to each skewer.
Preheat your grill to hot, place the skewers of chicken on a wire rack over a flat baking sheet, brush liberally with the marinade and grill turning frequently for about 10-15 minutes or until cooked through. Garnish with a little fresh spring onion.
