Lamb shoulder mini roasts quick juicy tender.
These mini Lamb Shoulder roasts are quick to make, lovely and tender.
You can buy them ready boned and rolled in butchers shops or you can ask your butcher to do it for you. Just take a picture along.
These cuts are perfect for pan to oven roasting, just make sure to rest covered for 10 minutes before serving.
You can also use short saddle of lamb for this too. Although short saddle is more expensive than shoulder.
Typically these small joints should be 450 – 500 grams.
Perfect with a red wine reduction and meat juices for a sauce.
- 2 Lamb shoulder mini roasts (450 - 500 grams each)
- A little oil for searing.
- Pinch of salt.
- Fresh ground black pepper.
Preheat your oven to 230 degrees Celsius 450 Fahrenheit.
Drizzle a little oil on the Lamb massage in all over and sprinkle a pinch of salt and some ground black pepper.
Place a heavy frying pan on to a high heat and when just smoking hot sear the lamb on all sides for 6 - 8 minutes.
Transfer them to a shallow roasting tin and place in the hot oven for 13 minutes for medium (pink in the middle) or 15 -16 minutes for well done.
Remove from the oven, cover with foil and leave to rest for 10 minutes. Then slice and serve. These are delicious with a red wine reduction and meat juices for a sauce.
