Pan Haggerty simply delicious vegetarian dish

Pan Haggerty.

This is my version of a traditional Northumbrian dish of potatoes, onions and cheese.

I first made the traditional recipe years ago. It was nice but I found it lacked some flavour so I thought I would rectify that.

So I came up with this one. Full of flavour and colour. Not only is it delicious on its own but a great side dish too.

It works very well with hot glazed ham and eggs or pan fried fish. Be warned though it has a ton of cheese and garlic.

With those kind of ingredients, what’s not to like!

NOTE: You will need a 26cm cast iron skillet or heavy frying pan with a lid and must be suitable for use under a hot grill.

Ingredients

  • 4-5 Large potatoes thinly sliced.
  • 2 Red peppers finely diced.
  • 1 medium onion thinly sliced.
  • 6 Fat spring onions sliced and shredded.
  • 5 Fat cloves of garlic very finely chopped.
  • 500-600gms Strong cheddar coarsely grated.
  • 1oz unsalted butter.
  • A good Glug of light Olive oil.

Method

Step 1

Slice, dice and chop the peppers, spring onions and garlic and mix together in a bowl. See images above.

Step 2

Peel and thinly slice the potatoes, try to keep them the same thickness. Rinse and set aside.Thinly slice the medium onion.

Step 3

Place a cast iron skillet or heavy frying pan on a gentle heat. Add the butter and olive oil and just melt.

Step 4

Ok now lets build those layers. I would suggest that no more that 3 layers max or the potatoes may not be cooked through in the middle.

Step 5

To the warm pan add the slices of medium onion, then a layer of potatoes then a sprinkle of the pepper spring onion garlic mix then a generous handful of cheese. Save some of the pepper, spring onion mix and cheese for the top. See the images above.

Step 6

Now continue to do this until you have no more than three layers.

Step 7

Place the pan on a low to medium heat, cover with the lid and cook for about 45 - 50 minutes or until the potatoes are cooked through and the cheese is melted. Just use a skewer for this.

Step 8

Heat your grill to high heat. Sprinkle over the remaining spring onion and pepper mix followed by a nice handful of cheese. Place this under the grill until nicely brown bubbling and melty.
