Pizza home made quick easy. No faff and child friendly.

No messing about with dough using a cheat of fresh made garlic and coriander flatbreads from the supermarket.

My take on a home made pizza is quick and very easy using leftover cured meats vegetables and cheese.

Use whatever you have hanging around in the fridge, any bits of cheese or peppers etc. The list is endless.

The pizza’s in the picture consisted of. Left – Red pepper, mushrooms, brie, gouda, mozzarella and spring onion.

On the right – Chorizo, salami, serrano ham, mushrooms, mozzarella, gouda, cholula chipotle hot sauce and caramelised red onions.

This is great if you want a quick supper and fun for the kids to build their own.


  • 2 Fresh garlic and parsley or garlic and coriander flatbreads (Tesco and Asda are very good)
  • 1 Tin of plum or chopped tomatoes
  • 2 Teaspoons dried mixed herbs
  • Leftover cured meats, cheese or whatever you have lurking in the fridge.


Step 1

Preheat the oven to 175 Celsius 350 Fahrenheit.

Step 2

Place a saucepan on a moderate high heat and empty the tomatoes in, crush with a fork and add the mixed herbs. Bring to rapid simmer and allow to reduce until it becomes a thick sauce. Remove from the heat and allow to go cold.

Step 3

Place your flatbreads on a non stick baking try and spread generously with the tomato sauce.

Step 4

Add the toppings of your desire. Drizzle with olive oil and place in the oven for around 12 minutes.
