Slow roast pork hocks

Crispy crackling and soft and falling apart meat with a sumptuous rich flavour. These pork hocks are an inexpensive cut that looks impressive on the plate!


  • 2 Pork hocks
  • Salt


Step 1

Preheat the oven 450 Fahrenheit 225 Celsius.

Step 2

Score the skin as best you can *TIP* I have a sharp Stanley knife I keep just for food use. Sprinkle with a little salt.

Step 3

Place the hocks in a roasting tin and cook in the oven uncovered for 15 minutes.

Step 4

Reduce the heat to 320 Fahrenheit 160 Celsius and cook for two hours 45 minutes, then increase the heat to 450 Fahrenheit 225 Celsius for the last 15 minutes or so to crisp the crackling.
